Great news for everyone!!
If you are a lover of crepes, pancakes, waffle syrups, this post (in all its goodness!) is for you!
For the most part, the items that make up our breakfast these days are sickness in a jar with a pretty label; Jams, Butters, Juices, Syrups, Whipped Creams, … even dressings for good old salads! Store-bought versions of these are simply a no-no for me at this point in my life and forever more! Let’s face it, they do make breakfast look and taste good! So why not figure out a way of keeping (a clean version of) them around? Make them yourself and save your body lots of diseases, let’s not forget the cash! 😉
Aunt Jemima( A famous brand of pancake syrup, for those who don’t know) did serve me well in my previous life, I must say. It’s just that, once you go homemade, you honestly can never look back.
I live for the homemade section of stores these days, guys! 85% of the time, my money goes to food ingredients or cookware; it’s insane! I am pretty sure we are hitting the 90% mark already. I almost forget to buy clothes these days!
I have to give a quick shout out to my friends. haha! I wake up or walk out of class like ‘I HAVE to go the store to get this and that for this recipe I have in mind’ haha! And they literally come along with me carrying all the patience in the world! –Jesus, be a lot more of that patience and walking energy!–
I sat in class during final presentations, daydreaming about my (celebratory) breakfast during the weekend and that is how I came about this recipe.
I love food! Thank God for the Grace to make it myself and make it right. I have become that girl who goes to the restaurant buying food yet taking out everything; ‘can you take out the cheese?’, ‘can you not add the dressing?’, ‘What exactly do you mean by a veggie plate? Are the veggies cooked or raw?’. A few days ago, a waitress said to me: ‘what exactly do you want on your plate? You’re taking out everything!’
Haha! Well can you do your job?
Here’s my take on breakfast guys:
It’s the most important meal of the day. It’s the first meal of your day. Start the day right, you know? It has to be pretty, it has to be healthy, it has to be grande(accentuate the ‘e’)! You have to walk to the kitchen or dining table like ‘Praise The Lord for a GOOD MORNING!’ It has to put a smile on your face; especially breakfasts on weekends and holidays. If you have the time, you might as well do it big, you know?
Okay back to why we are all here! I’m sorry I got a little too excited to take photos of the step-by step.
Disclaimer: If you try it and don’t happen to feel the same way, please don’t judge me. I am crazy about mine. 😉
HOMEMADE STRAWBERRY SAUCE:
This strawberry sauce is theee best! I have made strawberry syrups before, but this one – for same strange reason – tastes like…. everything! It had me craving breakfast all day and it literally took the discipline of The Lord to keep me from eating pancakes at 2:00 am once.
–Pause. A few days after I had to eat French Toast at 11:53 pm! I had to have it, guys. The fact that it was before 12:00am and that I made it with multigrain bread honestly saves me a guilt trip :p —
I had it 3 days in a row, guys!
(Please modify recipe to your preference)
2 cups of diced strawberries. (I also threw in some raspberries but you don’t have to)
1/4 cup of (cane) sugar
1Tbs of freshly squeezed lemon juice
A dash of salt.
1/4 cup of water
1.Put all ingredients in a pan.
2. Bring to boil on low-medium heat and let it simmer for 15-20 minutes. (Do not overcook in order to have some chunks in there!)
3. Serve warm or cold.
COCONUT WHIPPED CREAM RECIPE:
(Makes 4 (2Tbs) servings)
1 13.5 ounce can of full fat Coconut Milk/ 3 cups of homemade Coconut Milk (I’ll do a post on how to make homemade almond and coconut milk soon!)
1/2 teaspoon of vanilla extract
A drizzle of honey (optional)
I mostly like to make my own coconut milk, but if you happen to want to buy from the store, make sure the ingredients are: “(Shredded) coconuts, filtered water and guar gum”. Everything else is extra that you do not need!
If store-bought :
1.Refrigerate can without shaking overnight or for a day – don’t miss this step.
2. After 12 hours (at least), open can without shaking! You will realize that the fat has separated and hardened from the liquid.
3. Scrape off the fat into a mixing bowl. Please make sure not to add the liquid because that makes it watery and just not what you imagined. (You can use the liquid for pancakes, crepes, or smoothies.)
4. Add remaining ingredients and whip with an electric hand mixer or food processor until all ingredients are blended.
5. Refrigerate if you want to serve it chilled. I do that! 😉
These two toppings with pancakes, waffles, french toasts or crepes?……. I can’t even begin to explain to you!
HOMEMADE PANCAKE SYRUP
This is for those who desire all that it takes to experience some sugary goodness!
1/4 cup of brown sugar
1/4 cup of cane sugar
1/2 cup of water
1/4 teaspoon of vanilla extract
a dash of salt
- Place all ingredients in a pan
- Bring to boil on low-medium heat, stir till it thickens
- Serve hot or let it cool.
Breakfast all day doesn’t sound so shabby, if it looks like this :p
