Coconut Granola (Grain-free, Sugar-free)

Hi Family!
I just realized it’s been quite a while since I put up a recipe. To be honest,I am adjusting to a new schedule, sometimes feeling like I’m still catching up to the week when it’s already Wednesday! A lot of the fun has also been happening in the kitchen; and integrating the two inspired my #DinnerIn30Minutes Series on Instagram(if you follow). The #Whole30 journey was crazy good(!!!), and I definitely look forward to a couple more this year.
I mean, ideally I am still eating whole30-compliant meals, except I’m baking and indulging (You can obviously tell with me pairing granola with homemade icecream) – which aren’t allowed during your #Whole30. I think one of the best things post-Whole30 so far, is learning to bake grain-free! absolutely rewarding x best thing ever! Not sure if I am ready to warm up to legumes and grains just yet, and I really am not complaining.. like at all!!
That leads me to this goodness of a recipe! So one fun fact about me is: I go crazy over food! I actually obsess over it (in the purest of ways! not the unhealthy kind). SO every recipe I manage to nail, is ‘the best thing ever’.lol. I could potentially be saying mango cubes and cinnamon are the ‘best thing ever’ tomorrow.
I had a little talk with myself, and decided that EVEN IF I do go back to grains, I am not sure I want to have oatmeal as a constant in my diet, or as a staple in my pantry. And after getting ‘oat-less oatmeal’ (creative much?) down packed, this grain-free granola was the deciding factor. If I nailed it, it was definitely buh-bye to oats.
AND, YES PEOPLE!!!!! WE MADE IT! First oat-less ‘oatmeal’, now grain-free granola? absolutely winning!
This recipe is crunch-heaven, with no refined sugar! And no, not even honey or maple syrup! It’s sweetened with dates!
Who says no to coconuts, dates, nuts, chia seeds? yet to find that one!
Here you go: Granola, in all its nutrient-dense, guilt-free glory!
Grain-Free, Sugar-Free, Coconut Granola Recipe:
**Please Note: You can simply eyeball the measurement of ingredients. Double it, triple it, whatever! 🙂 There’s no limit to any ingredient, really. And add as many components as possible…just don’t go crazy on the dried fruits-if using! 🙂
3 cups of shredded coconut. 11/2 cup of nuts of choice (I used almonds, cashews, and walnuts)¼ cup of (pitted) date paste. (Soak your dates in warm water for about 10 minutes. Once they are moist, peel off the skin, remove the pit/’seed’, and blend until you get a paste. Don’t worry about it getting smooth. There are no rules here at all!)¼ cup coconut oiloptional: pure vanilla extract -not #whole30 compliant though(1 tsp) , dash of cinnamon, chia seeds, raisins or other dried fruit of choice (up to ½ cup)
Preheat the oven to 300 degrees.In a large bowl, mix your shredded coconuts, nuts, chia seeds, (melted) coconut oil, and other optional ingredients (-if using)Add pure vanilla extract -if using.Spread on a parchment paper lined baking dish.Bake for about 25-30 minutes, pull out of oven and mix in your date paste. (be careful, the granola WILL BE HOT at this point! Place your baking sheet in the oven, and bake (stirring frequently) until starting to brown. Remove from oven, and let cool. It gets crunchier when it cools! :D.Store in an air tight jar and use within two weeks. I can assure you, it wont last that long!
Serve with …….I should really be a good influence and say yogurt, but it’s SO GOOD with THIS homemade ice cream…… so I’ll sayyyy try with the yogurt on your second round! Ice cream, yogurt…po-tay-to, po-tah-to… pretty much the same! 😉 lol!
