Oatless ‘Oatmeal’ Recipe

Hi Family,

 

This is the final full week of my #Whole30 journey and I’m so sure I am going to stick to this life a lot more than 30 days in a year! It’s honestly one of the best things you can do for yourself -health-wise; and again, I encourage everyone to challenge themselves to it! If 30 days is too intense for you, try the #whole21, or #whole14. Never heard of #Whole7, but hey! make it up and do something great for your body!
The recipes I have discovered are the simplest, yet most delicious! Like this oatless ‘oatmeal’ recipe!
By the way, I was thinking to myself the other day… why do we do that? Wy are we always giving our meals names of foods they’ll never be! Why does this have to be an ‘oatless’ oatmeal instead another name which includes an actual ingredient? LAUGH OUT LOUD! That’s very funny to me. Lack of creativity, maybe? who knows? *shrugs*
Anyways, this oatless oatmeal will have you asking “what oatmeal?”. I am pretty certain I am done with oatmeal. Pretty certain. That’s how good this recipe is.
Now, before I actually made this, I hesitated a bit. I took a moment to stare at the ingredients like “are you sure about this Nana?”. And I know you would probably bounce after looking at the ingredients. I can give you my word: ignore that feeling that may shake you up in anyway. As I always say, how do you know you don’t like it when you haven’t even tried it? Just try it!
Top it up with whatever fruit you have at home. I have this love affair with almond butter (no peanut butter here, plus it isn’t #Whole30 compliant). I add it to everything! I would always eat my oatmeal with it, once I discovered it. With this recipe, our love affair is on a whole other level.
I know I talk a lot sooooo…. let’s get to it.
Ingredients:

Egg whites of 2 eggs (I use egg whites from a carton)3/4 cup plant-based milk (I make mine at home)1 1/2 tablespoon ground flaxseed/chia seeds. If you have whole flax seeds, just blend them with your blender! Save money

1/2 of large (very ripe) banana, mashed OR 1/2 cup applesauce (Easy-peasy recipe for homemade here.

1/2 zucchini, grated1/2 teaspoon cinnamon

Instructions:

Combine mashed banana/applesauce and zucchini in a small bowl. Set aside.Combine egg whites and almond milk in a small saucepan and stir with a spatula over medium heat. (this should be just about a minute. don’t let the egg whites fully cook before your eyes lol)Add flaxseed and continue stirring until mixture begins to slightly thicken. Now, add you banana/applesauce-zucchini mixture and stir constantly as oatless oatmeal begins to thicken. (Do not leave on stove unattended)Add cinnamon, reduce heat and continue to stir until desired level of thickness is reached.Top with whatever you have on hand (berries, nuts, nut butter, unsweetened shredded coconut.. etc) and enjoy!- My staple toppings are berries, unsweetened shredded coconuts and ALMOND BUTTER :)ENJOY!! … oh and you sure will!
