So I gave myself a little pat on the back because I realized that I haven’t had any legumes or grains in 30 days (#whole30) PLUS 13 days! How great?! And I am actually loving this!
Sooo, in honor of this, I have decided to share my cauliflower ‘fried rice’ recipe with all you lovely people!
You know, one thing I find hard to accept and believe is how cauliflower is disliked by so many… or at least, my friends :/
I make so many exciting meals with cauliflower;and especially now, I really can’t imagine my life without it! It’s such a versatile vegetable: you can eat it raw, roast it, steam it, use it in your soups…. you name it! Ieven make cauliflower ‘mashed faux-tatoes’ bhaha! And, besides what you and I feel, cauliflower is packed with loads and loads of nutrients!

-has digestive benefits and provides detoxification support.
-packed with antioxidants and phytonutrients: vitamin C, beta-carotene, cinnamic acid, and so much more. Antioxidants are ‘nature’s way of providing your cells with adequate defense against attack’.
With that said, let’s jump right into the recipe.
The truth is, there really isn’t one way to make cauliflower fried rice. I think you simply need to make use of whatever veggies you have, once you ‘rice’ the cauliflower. Don’t ‘break your bank’ just to use the veggies I used.
1 head of cauliflower1 medium sized onion1 large carrot (shredded)Bell peppers (diced)Green onions (scallions)1 (branch?) Leek1 clove of garlic minced1’/2 tsp of ginger minced1 tbsp of coconut oilSalt and black pepper to tasteOptional add-ins: coconut aminos (because no soy sauce in my books), curry (to make curried fried rice)
Cut the cauliflower into florets, and rice them by processing them in your blender or food processor for 30 seconds
Heat oil in your frying pan, add in ginger and garlic and stir until fragrant BUT NOT BROWNED! 🙂 [This step is EVERYTHING!! by the way!]
Add onions and stir for about a minute. (I’d say make sure they aren’t too soft because I do not like my veggies soft AT ALL!)Add in your rice, salt and black pepper to taste, and cook on low-medium heat for just about 5 minutes.Now, add in your bell peppers, carrots, leeks, scallions (in that order) at this pointTaste and adjust salt and black pepper to your preference.
Keep stirring to fold in all the veggies, for just about 11/2 -2 minutes…*again, because I love my veggies very crispy versus overcooked**
That’s it! You have your Cauliflower Fried Rice!
